办桌在闽南乡间至今仍十分盛行。所谓办桌，就是遇上婚丧喜庆，便请了专门的大师傅来掌勺，办上几桌甚或上百桌，宴请亲朋好友，场地往往就在自家周边的空地上，菜金也是丰俭由人，在北方称为流水席。办桌师是自古就有的行当，但如今却有些变化，柳家奖是（厦门）翔安最早开起办桌公司的人。

Catering is still very popular in the villages of south Fujian province nowadays. Whenever there are weddings or funerals in the village, people there will hire chef to their property to carter for feast for a couple of tables’ guests or hundreds of tables’ guests. Normally such feast is held outdoors around host’s house. The food cost is up to host and in north of China, there is feast called flowing dinner (dinner served separately as the guests arrive in succession). Catering service was available since ancient times and develops differently nowadays. Liujiajiang is the first person who opened catering service company in Xiang’an district of Xiamen city

01年的时候就学厨，进入厨师这一行业，到05年的时候，我就跟我一个师兄弟，两个人带着一两个小工，就开始四处打游击做办桌师。四处去。到2008年的时候，我们那时候开始办桌以后，需求的人越来越多了，形形色色的办桌都有。然后我们成立了一个办桌公司。

I started learning cooking in 2001 and engaged in this industry since then.  Since 2005, my partner and I started a small team with another two apprentices and started providing catering service in different places. In 2008 when we got increasing orders for this service, we decided to start a catering service company.

好 来这里。1.28 刚好 , 我们一般的话，龙虾都有规格都有跟人家定，每一桌多大的龙虾都会有定，现在菜好不好看食材，我们现在的食材，都有专门的人员跟班组配送。

"Come here to weigh. It's 0.64KG". Normally, the weight of lobster to be served for each table is specified to order. The quality of feast depends on the food material and there is people arranged to deliver the food material we order 

对供货商要比评，每个供货商谁的供货好，就是找谁来供货。

We will evaluate vendors to select the vendor who can supply the best products to us

琼坑李氏宗亲祭祖，这场宴会它是采用投标方式，因为他的场比较大，他的宴席规模比较大。上百桌规模比较大。所以要去投标。

The feast for Lee family's ancestor worshipping in Qiongkeng village will be provided by catering service company who wins the bidding as this banquet will be on large scare, more than one hundred tables' capacity , so we decided to bid for it

我们今天中标了。今天这个标，也不是很贵，然后我还是觉得我们应该去做好，去提高我们的知名度。And today we won the bidding for this feast catering and actually this catering is not very lucrative for us but we still will try our best to provide the best catering service for it to make our company more well known.  

琼坑村四十年前才整体搬迁到这里，但先祖据说是唐朝时，从甘肃陇西县迁徙到福建的，有六百多年的历史。今天是祭祖的日子，村里热闹非常。

The whole Qiongkeng village moved here four decades ago and it's said that the villagers migrated to Fujian province from Longxi county of Gansu province in Tang dynasty and have been living here for over six hundred years and today is the date for worshipping their ancestor so the whole village is very bustling  

我们以前办桌，主要是以肉类跟菜类为主，它以前办桌的时候，它就有三封四拼盘，二十四道菜，后来就会加上同安封肉、封鸭、封猪肚，现在办桌是不一样。现在就是说以海鲜为主，我们一般只做16道菜，根据客人不同的需要，它就会选用不同的食材。

We used to serve meat and vegetable for feast and there used to be three kinds of braised food , four assorted dishes and 24 courses and then would add the braised meat, duck and port tripe. And nowadays, most of food we cater for feast is seafood and normally we serve 16 courses using different food material as per customer's request

我们现在办桌一般最低800元一桌，最多有7000多的。

Currently the price of one table we cater is RMB 800 at the minimum and over RMB 7000 at the maximum 

我们16道菜，是一道一道的上，上完一道菜，前面一道菜吃完了，把盘子退下来。

The 16 courses for the banquet are served one by one. The new course will not be served until the previous one is finished
